Building our diets around GREEN-RATED foods is the most effective way to prevent and reverse type 2 diabetes. A significant body of evidence suggests that diabetes is caused by fat, not carbohydrates. While refined carbohydrates can cause blood sugar to spike, the unrefined carbohydrates from unprocessed plants has been shown to help stabilize blood sugar, most likely due to their high fiber content. While any successful weight loss diet can help stabilize blood sugar by eliminating body fat, the most effective way to prevent and reverse type 2 diabetes is to avoid eating high fat foods, especially RED-RATED foods, which are also low in fiber.
